Brown Buona Vita Raw Bulk Sweet Sausage in a pan on high heat and drain off the extra fat.
Crack the eggs and whisk in a bowl with a pinch of salt and pepper.
In a small frying pan on low heat, melt 1 tablespoon of butter and ladle in about two eggs.
Using a spatula, move the eggs around to create a golden brown crust underneath, fill one half of the omelet with sausage, cheese and asparagus.
Fold the omelet over to melt the cheese and serve.
